Orange-Macerated Strawberries

In June, my strawberry prep entails. . . washing. I can’t improve upon a perfectly ripe strawb. Before their peak however, in April and May, I like to jazz them up simply for a Spring treat.

1 pint strawberries, de-stemmed and halved

1 orange, juiced

1 tablespoon sugar (totally optional - it’s delish without it!)

Pour orange juice and sugar (if using) over berries. Refrigerate for 30 minutes to a few hours, tossing to coat a few times. Remove from fridge before serving, allowing mixture to come to room temp.

I serve this with plain Greek yogurt for an afternoon snack. For dessert, I whip a can of coconut cream and add to it maple syrup and vanilla bean or extract. Dairy-free berries and cream!
